Sweet Potato Chili

You will need:

2 – Sweet Potatoes , diced                      

2 – 14.5 ounce Cans of Diced Stewed Tomatoes

1 – 8 ounce Can of Tomato Sauce         

3/4 cup diced Sweet Onion

1/2 cup chopped Celery                          

1/2 Cup Water

1 tablespoon Chili powder                      

1/2 teaspoon ground cinnamon

1 teaspoon ground cumin                       

1 pinch Salt

1 pinch ground black pepper                

1 pinch garlic powder

1 pinch onion powder                              

1 lb Ground Turkey meat

1  12 oz can of corn                                  

1 12 oz can black beans, drained & rinsed


1- Place sweet potatoes, stewed tomatoes, tomato sauce, onion, celery, water, chili powder, cumin, cinnamon, salt, black pepper, cayenne pepper, garlic powder, and onion powder in a slow cooker. Cook on high, stirring occasionally, for 5 hours.

2- Heat a large skillet over medium-high heat and stir in ground turkey. Cook and stir until meat is crumbly, evenly browned, and no longer pink, 10 to 15 minutes. Drain and discard any excess grease. Add cooked ground turkey, black beans, and corn to sweet potato mixture in the slow cooker; cook until flavors have blended, 1 to 2 more hours.  Serve warm.

I usually add a spoon of non fat greek yogurt and crumble cornbread on top, but thats totally up to you!
