21 Day Fix Slow Cooker Latin Chicken

This 21 Day Fix Slow Cooker Latin Chicken recipe combines so many flavors to keep you from getting bored with Chicken! I LOVE this recipe whether you use the slow cooker OR my new obsession the Instant Pot!  With the instant pot change the time to 13 minutes. This is the perfect 21 day fix meal when you are short on time but need a fast, healthy meal!

Spicy cumin, chicken, salsa, black beans, and sweet potatoes combine into a flavorful stew. The thigh meat has unbelievable flavor and tenderness.

6 -8 Servings, Prep Time: 25 Minutes, Cook Time: 3- 4 hours

For this 21 Day Fix Recipe You will need:

1 tablespoon olive oil

4 skinless chicken breasts

salt and ground black pepper to taste

1/4 cup loosely packed cilantro leaves

2 large sweet potatoes, cut into chunks

1 red bell pepper, cut into strips

3/4 cup chicken broth

1/4 cup loosely packed cilantro leaves

1 cup salsa

2 teaspoons ground cumin

1/2 teaspoon ground allspice

3 large cloves garlic, chopped

2 (15.5 ounce) cans black beans, rinsed & drained

Greek Yogurt

Prep:

~Heat the olive oil in a large skillet; season the chicken with salt and pepper. Brown the chicken in the frying pan, 3 to 5 minutes each side.

~Arrange the chicken in the bottom of a slow cooker. Sprinkle 1/4 cup cilantro over the chicken; Place the sweet potatoes, red bell pepper, and black beans on top of the chicken. Mix together the chicken broth, salsa, cumin, allspice, and garlic together in a bowl; pour into the slow cooker. Set slow cooker to LOW and cook for 3 – 3 1/2 hours. Check Chicken to know when done.

~Pull Chicken apart like shredded chicken then add back to the pot and Mix all together

I also add a dollop of Greek yogurt to it and stir up.
