This is one of my Easy, Fast meals when I have about 30 minutes to figure something out! I keep salmon frozen in individual pieces always so its easy to pop them out and de thaw in a pinch. You can also sub quinoa or cauliflower rice to make the recipe Gluten Free.
You will need:
Salmon- one piece per person
Whole Grain Orzo- 2 cups
Asparagus- about 4 – 5 spears person
Magic Salmon Seasoning- available at whole foods, amazon, fresh market
Pepper if desired
Preheat Oven to 400
*Place the Salmon on Aluminum Foil on a cookie sheet or Baking Sheet
*Brush the Salmon With Olive Oil, then coat with the Magic Salmon Seasoning
*Bake at 400 for 19 minutes, if salmon is cut into thicker pieces, bake for 20-21 minutes
*Make the orzo according to directions. Should be to boil for around 8 minutes
*Chop the Asparagus in 1 inch pieces and Sauté in olive oil in a pan on the Stove
**Combine all Ingredients and Sprinkle Goat cheese over Top.**
